Light, airy texture and intense chocolate flavor, this recipe is a classic dessert for chocolate lovers.
Preparation time: 15 minutes
• 250 g baking chocolate
• 4 egg whites + 2 yolks
• 30 g unsalted butter
• 12 cl whipping cream
• 1 pack of vanilla sugar
• a pinch of salt
• Fève tonka (optionnel)
Heat 180 g of grated chocolate and cream to a boil.
Whisk until smooth and gradually add butter in chunks.
Grate the remaining chocolate.
Beat egg yolks and sugar until light.
Beat egg whites with salt until stiff.
Add egg yolk mixture to melted chocolate and blend. Add egg whites and grated chocolate and mix gently.
Spoon into small bowls or ramekins. Refrigerate for 3 hours.
Tip: use Tonka beans, coffee, cinnamon, orange zest or Grand Marnier for an amazing twist.
